About Birb Gelato

Birb Gelato was born from a simple conviction: gelato should be bold, fun and interesting at every bite. We turn our experiments into production quality gelato.


We make everything in micro-batches — usually 15-20 pints at a time — from scratch in. No premixes. No stabilisers we can't pronounce. No shortcuts. Every pint starts with real fruit, real nuts, real chocolate, and whole milk, spun fresh and frozen immediately.


What we don't do: factory-scale production, year-round menus, or flavours that taste like everything else on the market.


What we do: weekly drops announced every Sunday, orders close Thursday at 11pm, and we hand-deliver to your doorstep on Saturday. Each drop has three signature flavours and at least one seasonal experiment — something we're excited about that week. If it works, it might come back. If it doesn't, it was delicious and we learned something.
